Butternut Curry Chicken Soup
This soup is so good, I think I’m just going to call it “that really good soup”.. 💡 But what I should probably call it is “creamy curry roasted stuff with chicken.” 💡 💡 🥣
-Peel and cube a butternut squash and some sweet potatoes.
-Coat in avocado oil and salt, and Roast at 425 until brown (about 25 min).
-Blend with some AliMade Beef Broth (I know that sounds weird to not do chicken, but the beef is so so good in this!)
-Pour back into a stock pot (med-low heat) and pour in a can of unsweetened coconut milk, some curry powder, and s/p till the flavor is 👌🏼.
-add some shredded chicken.
-serve warm and Wow! 💡
