When some vegan friends approached me about making broth for them, honestly, at first I asked, “What’s the point?” I was drinking bone broth for its collagen, gelatin, and protein… what can vegetable broth do for you? Actually, I found through research: quite a bit! Not only are you able to ingest a greater variety of vegetables through drinking them (unless you regularly eat a head of cabbage and broccoli stalks), but also you are able to absorb more nutrients from the vegetables because they’re predigested and in liquid form! I’m sold! Then, upon making Vegetable Broth, I realized, I love the taste of this incredibly smooth, sweet-yet-savory, delightful drink more than any of my other broths (shhhhhh, don’t tell them that, though)! At around 15 calories per cup, this broth will fill you up without weighing you down, warm your belly and soothe your soul, power you to reach new heights and inspire you to share the love. Well, I can’t guarantee all that, but that’s what it does for me. 🙂

Why just eat your veggies when you can drink them?!
