Pumpkin Spiced Everything Soup

Here it is! The soup we’ve all been waiting for that perfectly captures the season we’ve all been waiting for! Even though it’s not baby food by any means, I’m stoked that my kids all loved this soup - so many nutrients, goodness, and flavor in each spoonful!

How to:

*Sauté in avocado oil:

- 1 red onion, diced

- 4 cloves garlic, minced

- 2 big sweet potatoes, peeled and roughly cubed

- 2 little butternut squash, peeled and roughly cubed

- 2 big carrots, peeled and roughly chopped (I cheated with baby carrots)

- 1 apple, cored and skinned

- 1 can pumpkin purée

- 2 Tbsp pumpkin pie spice

- 1 Tbsp cumin

- 1 Tbsp salt

- 1 tsp pepper

* move to crock pot or leave on stovetop

- add 4 C AliMade Chicken Bone Broth or AliMade Vegetable Broth (or a mix)

- add 1 tsp vanilla

* crock pot on low 6-8 hours or on high 3-4 hours (OR stovetop maybe simmer 1 hour?)

* immersion blender (or cool a bit then blend small batches in actual blender) until smooth

- stir in 1/2 can full fat coconut milk
